Canned Fruit Cooked in a Water Bath
Ingredients
Directions
Prepare the fruit and syrup as you would for oven cooking.
Fill sterilized jars with the fruit and syrup, and place the covers on loosely.
Place a wooden rack in the bottom of a wash boiler and add enough warm water to reach about 4 inches above the rack.
Arrange the filled jars in the boiler without letting them touch each other.
Pack clean cotton rags or rope between and around the jars to prevent them from striking each other when the water boils.
Cover the boiler and cook the fruit for 10 minutes once the water begins to boil.
Remove the boiler from heat and take off the cover.
Once the steam has dissipated, remove one jar at a time and place it in a pan of boiling water.
Fill the jar with boiling syrup and seal it.
Place the jars on a board and avoid exposing them to cold air.
If using screw tops, tighten them once the glass has cooled and contracted.
