Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

What each ingredient does

Strawberries
Provide the fruit that forms the body and flavor of the preserves.
Sugar
Draws moisture out of the fruit and helps preserve it through sweetness.
40° syrup
Supplies thick sugar syrup that surrounds the fruit and helps it keep its shape and moisture.

The step that matters

Standing in the hot sun. Sugar draws water out of the strawberries and dissolves into the juice, so the fruit must sit undisturbed long enough for the syrup to thicken and penetrate. Cover the dish to keep out insects and dust while it stands.

Swap the strawberry

How well each one fits the dish's main ingredients (sugar, syrup):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits better
  4. Strawberrythe original

Fit is the average pairing score against sugar, syrup. Candidates are from the same food group and used in at least 100 recipes.
