To Make Raisins

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Make a strong lye by boiling wood ashes in water.

  2. Plunge grape clusters into the boiling lye and let them wilt.

  3. Remove the grapes once they are withered and wrinkled.

  4. Drain the grapes and spread them on a drying rack.

  5. Dry the grapes in an oven at 300°F (150°C) or in the sun.
