Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg yolks separately.

  2. Add sugar and flour, and beat until light.

  3. Gradually stir in the hot milk.

  4. Beat the egg whites to stiff peaks and fold into the mixture.

  5. Flavor with your choice of extract.

Bake and serve

  1. Pour into a baking dish and bake at 400°F (200°C) for 30 minutes.

  2. Serve with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard while whipped whites lighten the batter and give it structure as it bakes.
Flour
Starch thickens the mixture and helps it hold its shape as it sets.
Milk
Provides the liquid base that sets with the eggs into a soft, custard-like texture.
Sugar
Adds sweetness and helps the batter beat to a light, smooth texture.

The step that matters

Folding in the egg whites. Whites beaten to stiff peaks trap air that makes the pudding rise and lighten. Overmixing or deflating them while folding in the batter loses that air, leaving a denser result.
