Nut Meringues

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the meringue

  1. Beat the egg whites until stiff, gradually adding ⅓ cup of the granulated sugar while continuing to beat until the mixture holds its shape.

  2. Fold in the remaining sugar, vanilla, and chopped nuts.

Shape and bake

  1. Drop spoonfuls of the mixture onto parchment paper placed over a damp board.

  2. Place in the oven with the door ajar for 30 minutes to dry the meringues.

  3. Once dry, close the door and brown slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that gives the meringues their light, airy structure.
Granulated sugar
Stabilizes the whipped whites and adds sweetness and a crisp set.
Chopped nuts
Add crunch and a toasty, nutty flavor against the airy interior.
Confectioner's sugar
Adds sweetness and a fine texture to the meringue mixture.

The step that matters

Beating the egg whites until stiff. Egg white proteins trap air only when beaten enough to form stiff peaks. Under-beaten whites collapse and spread in the oven, so the meringues lose their shape.

Swap the nuts

How well each one fits the dish's main ingredients (egg, sugar, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against egg, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
