Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Mix all ingredients together on a plate.

  2. Roll pastry into an oval shape.

  3. Place the meat mixture on the pastry.

  4. Wet the edges of the pastry and fold over the filling.

Bake

  1. Prick the top of the pastry well.

  2. Brush with a little egg or milk.

  3. Bake in a hot oven at 400°F (200°C) for about 30 minutes.

What each ingredient does

Pastry
Forms the sealed case that holds the filling while it cooks.
Raw meat
Provides the main filling, which cooks through inside the sealed pastry.
Onion
Adds moisture and savory flavor to the filling as it cooks.
Egg or milk (in the method)
Brushed on the top to promote browning during baking.

The step that matters

Wet the edges before folding. Water helps the pastry edges stick together so the seal holds during baking. A weak seal lets juices leak out and the filling dry or escape.
