Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main seafood flavor and tender texture when gently simmered at the end.
Butter
Carries the aromatics and adds richness and a rounded flavor to the soup.
Onion
Builds a sweet, savoury base as it browns in the butter.
Milk
Forms the creamy body of the soup and mellows its salty, briny edge.
Fine flour
Thickens the liquid into a smoother, creamier consistency when boiled.

The step that matters

Thickening with the flour mixture. Flour must be fully smoothed into water before stirring into boiling liquid, otherwise it clumps. Boiling then cooks out the raw starch taste and lets the starch swell and thicken the soup evenly.

Swap the clove

How well each one fits the dish's main ingredients (oyster, butter, onion, garlic, milk, pepper, flour):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits better
  4. Clovethe original

Fit is the average pairing score against oyster, butter, onion, garlic, milk, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
