Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the bulk of the dish; cooking softens its starch so the grains become tender.
Saffron
Gives the rice its yellow colour and a distinctive aroma.
Onion
Adds savoury depth and aroma to the cooking water, then is removed before serving.

The step that matters

Cook until the rice is soft, tasting occasionally. Rice keeps absorbing and cooking after it leaves the heat, so checking by taste prevents it from turning mushy or staying firm at the centre.

Swap the mace

How well each one fits the dish's main ingredients (onion, garlic, clove, cardamom, cinnamon, saffron, rice):

Fit is the average pairing score against onion, garlic, clove, cardamom, cinnamon, saffron, rice. Candidates are from the same food group and used in at least 100 recipes.
