Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the pie, becoming flaky and tender as it cooks.
Tomatoes
Add moisture and acidity that flavour the layers and keep the fish moist.
Sugar
Balances the acidity of the tomatoes and adds gentle sweetness.

The step that matters

Cover with greased paper before baking. The paper traps steam so the fish cooks gently in its own juices and the water and tomatoes stay in the dish instead of drying out. Greasing it keeps it from sticking.

Swap the tomato

How well each one fits the dish's main ingredients (fish, sugar, pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits about as well
  4. Tomatothe original
