Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the crab

  1. Remove the meat from the body and claws of the crab and mince it very finely.

  2. Season the crab meat with cayenne pepper, powdered mace, coarse sea salt, and black pepper.

Pot and bake

  1. Mix in 1 tablespoon of melted butter.

  2. Press the mixture into buttered pots and cover with melted butter.

  3. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Finish

  1. When cold, pour a little melted butter on top.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab meat
Forms the main body of the spread and carries its flavour.
Butter
Adds richness and moisture, and a cover that keeps the crab from drying out.

The step that matters

Mincing the crab very finely. Fine mincing gives the crab a smooth, spreadable texture once pressed into pots. Coarse pieces stay loose and can separate from the butter, so the finished potted crab feels uneven.

Swap the mace

How well each one fits the dish's main ingredients (crab, meat, pepper, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against crab, meat, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
