Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Boil the chickens until tender.

  2. Season the chickens with coarse sea salt, black pepper, and 2 tablespoons of butter.

  3. Add ½ cup of sweet milk to the cooking liquid and thicken with 1 tablespoon of flour.

Assemble and bake

  1. Line a dish with pie crust, place the chickens in the dish, and pour the gravy over them.

  2. Add 2 tablespoons of butter on top.

  3. Cover with another layer of crust and bake at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provide the main meat and body of the filling.
Butter
Adds richness and flavor to the seasoned chicken and the top of the pie.
Sweet milk
Combines with the cooking liquid to form a creamy gravy.
Flour
Thickens the cooking liquid and milk into a gravy that holds the filling together.

The step that matters

Thickening the gravy with flour. Flour must be stirred into the hot liquid and milk so its starch swells and thickens evenly. If it is added without enough mixing, it can clump and leave the gravy lumpy and thin.
