Roast Sweetbreads

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Parboil and blanch the sweetbreads in cold water, then dry them.

  2. Dip the sweetbreads in the egg, then coat with cracker crumbs.

  3. Place them in a small dripping pan and pour melted butter over them.

Roast and serve

  1. Roast in a covered oven at 400°F (200°C) for 45 minutes, basting often with gravy.

  2. Add catsup to the gravy, boil and strain it over the sweetbreads.

  3. Serve on fried bread.

What each ingredient does

Sweetbreads
Main protein; parboiling and blanching firm and clean them before roasting.
Raw egg
Binds the cracker crumbs so they adhere to the sweetbreads.
Rolled crackers
Form a crisp, browned coating when roasted in butter.
Melted butter
Adds fat that promotes browning and a rich flavor on the coating.
Cream gravy
Keeps the sweetbreads moist as they are basted and roasted.
Mushrooms or walnut catsup
Adds savory, umami depth to the gravy served over the sweetbreads.

The step that matters

Parboil and blanch the sweetbreads, then dry them. Parboiling firms the delicate tissue and blanching whitens it, so the sweetbreads hold their shape. Drying removes surface water so the egg and cracker coating adheres and browns instead of steaming.
