Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the bulk of the sauce and its fresh, mild body once drained of excess water.
Horseradish
Supplies the sharp, pungent heat that defines the sauce.
Cider vinegar
Adds acidity and sets the final consistency and tang of the sauce.
Sugar
Balances the acidity and sharp heat with a touch of sweetness.

The step that matters

Squeeze the pulp dry. Cucumbers are mostly water. If excess liquid stays in the pulp, the sauce turns thin and watery and the vinegar cannot set the consistency you want. Draining salted pulp and pressing it dry concentrates the flavour and keeps the texture stable.

Swap the celery

How well each one fits the dish's main ingredients (cucumber, horseradish, mustard, pepper, sugar, cider, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against cucumber, horseradish, mustard, pepper, sugar, cider, vinegar. Candidates are from the same food group and used in at least 100 recipes.
