Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks bind the batter, and whipped whites lighten it so the fritters stay tender.
Flour
Provides structure, thickening the batter so it holds its shape while frying.
Corn
Supplies the main body, sweetness and flavour of the fritters.
Milk
Adds moisture and liquid so the flour hydrates into a batter.
Lard
Conducts heat for frying and promotes golden browning on the outside.

The step that matters

Fold in the egg whites gently. Beaten egg whites trap air that gives lift. Stirring them vigorously deflates the foam, leaving the fritters dense and heavy.
