White Fruit Cake

Why it works: Coconut and almond match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 1,093 recipes. Both carry 2,3,5-trimethylpyrazine, which smells cocoa, roasted. The science ↓

White Fruit Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream the butter and sugar together until light and fluffy.

  3. Add the sweet milk and egg whites, mixing well.

  4. Stir in the grated coconut, chopped almonds, and citron.

  5. In a separate bowl, combine the flour and baking powder.

  6. Flour the fruit and nuts, then gradually add the flour mixture to the batter.

Bake

  1. Mix until just combined, then pour into a greased cake pan.

  2. Bake for about 1 hour or until a toothpick inserted in the center comes out clean.

What each ingredient does

Butter
Creams with sugar to trap air, giving the cake a light, tender crumb and rich flavor.
Sugar
Creams with butter for a fluffy base and adds sweetness and browning.
Egg whites
Add structure and help the cake set as it bakes.
Flour
Forms the main structure of the cake as it sets in the oven.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Blanched almonds
Add texture and a nutty flavor that holds up through baking.

The step that matters

Flouring the fruit and nuts before adding the flour mixture. Coating the heavy citron, coconut and almonds in flour helps them stay suspended rather than sinking to the bottom of the batter. Overmixing after the flour goes in develops gluten and can toughen the cake, so mix only until combined.

Swap the coconut

How well each one fits the dish's main ingredients (butter, sugar, milk, egg, almond, flour):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Coconutthe original

Fit is the average pairing score against butter, sugar, milk, egg, almond, flour. Candidates are from the same food group and used in at least 100 recipes.
