Let the mixture stand for 1 day.
Strain the mixture and add 1 pound of sugar for each pint of liquid.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Raspberries
- Provide the main fruit flavour and aroma, and colour, to the shrub.
- Vinegar
- Adds acidity that gives the shrub its tart, sharp character and helps preserve it.
- Sugar
- Balances the acidity with sweetness and helps preserve the liquid.
- Brandy
- Adds alcohol that helps preserve the shrub and contributes a warm aroma.
The step that matters
Skimming the foam while boiling. Foam that forms during boiling carries impurities and can make the syrup cloudy or off-tasting, so removing it keeps the shrub clear and clean-flavoured.
