Almond Soup

Ingredients

Directions

Make the stock

  1. Boil the beef or veal, vegetables, and spices in enough water to cover them until the meat is very tender and the gravy is strong.

  2. Strain the gravy and return it to the pot with 2 quarts of water and the vermicelli.

  3. Cook until the vermicelli is tender, about 20 minutes.

Prepare the almonds

  1. Blanch and finely pound the almonds, mixing them with a little of the soup to prevent oiliness.

  2. Gradually add more soup to the almond mixture until smooth and well combined.

Finish the soup

  1. Let the soup cool slightly, then strain it through a sieve back into the pot.

  2. Heat the soup gently, stirring frequently, and just before serving, stir in the cream.

What each ingredient does

Sweet almonds
Their ground fat and protein give the soup body, richness and a smooth, creamy texture.
Beef or veal
Long simmering releases gelatin and flavor, giving the stock its body and savoury depth.
Vermicelli
Fine pasta that softens in the broth, adding a light starchy body and bite.
Thick cream
Adds richness and a silky mouthfeel when stirred in at the end without boiling.
Egg yolks
Hard-boiled yolks add richness and a smooth, mellow texture to the soup.

The step that matters

Mixing the almonds with soup. Ground almonds release oil that can separate and make the soup greasy. Mixing them with a little warm liquid first, then gradually adding more, emulsifies the paste into a smooth, evenly combined soup.

Swap the mace

How well each one fits the dish's main ingredients (beef, clove, almond, egg, cream):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against beef, clove, almond, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
