What each ingredient does

Morello cherries
Supply the fruit, its tart flavor and most of the preserve's body.
Sugar
Sweetens the fruit and, at high concentration, helps preserve it and thicken the syrup.

The step that matters

Skimming the scum during each boil. Scum is foam and impurities that rise as the fruit cooks. Removing it keeps the syrup clear and stops off flavors from spreading through the preserve.
