What each ingredient does

Cream
Whipped cream traps air and adds richness, giving the dessert a light, creamy texture.
Isinglass
A gelatin-like setting agent that firms the mixture as it cools.
Cocoa
Provides the chocolate flavour and brown colour.

The step that matters

Chill the mold in ice until ready to serve. The isinglass only firms the mixture when it is cold, so the mold must stay chilled long enough for the dessert to hold its shape.
