Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Beat the eggs well in a bowl.

Make and bake

  1. Mix all the ingredients together until smooth.

  2. Pour the mixture into little cups, filling them half full.

  3. Bake for 30 minutes until the puffs are golden brown.

Finish and serve

  1. Remove from the oven, turn out onto a flat dish.

  2. Rub a little butter over each puff and dust with powdered sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and set the puffs as they bake.
Flour
Gives the batter body so the puffs hold their shape while rising.
Milk
Supplies moisture that turns to steam in the oven, helping the puffs rise.
Butter
Adds richness and flavor, and helps the outside brown.

The step that matters

Filling the cups half full. The batter needs room to rise in the hot oven. Overfilling can make the puffs spill over, while underfilling gives smaller, flatter results.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, egg, milk, butter, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against flour, egg, milk, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
