Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and 14,555 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Giblet Soup

Ingredients

Directions

Prepare the giblets

  1. Scald the giblets.

  2. Cut the gizzards into 8 pieces.

Make the soup

  1. Place the giblets in a large pot with the beef, bones, ox-tail, mutton shanks, onions, herbs, pepper, and salt.

  2. Add 3 quarts of water and simmer until the giblets are tender, skimming the surface regularly.

  3. Remove the giblets from the pot.

  4. Place the giblets in a serving dish.

  5. Strain the soup through a sieve.

  6. Add the cream and butter mixed with flour.

  7. Bring the soup to a boil for a few minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Provide the main meat and rich flavor that the soup is built around.
Butter mixed with flour
Thickens the soup slightly and adds body and a smooth texture.
Cream
Adds richness, mild sweetness and a smooth, velvety texture.
Shin of beef
Releases gelatin and savory depth into the broth during long simmering.

The step that matters

Skimming the surface while simmering. Impurities and fat rise to the surface as the broth simmers. Regular skimming keeps the soup clear and clean-tasting rather than cloudy or greasy.

Flavor stand-ins for the carrot

How well each one fits the dish's main ingredients (beef, mutton, onion, pepper, cream, butter, flour):

  1. Potatobetter flavor fit
  2. Leekbetter flavor fit
  3. Chiveabout as good a flavor fit
  4. Carrotthe original

Fit is the average pairing score against beef, mutton, onion, pepper, cream, butter, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
