Why it works: Thyme and marjoram match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓

What each ingredient does
- Calf's head
- Provides gelatinous meat and body that gives the soup its rich texture.
- Butter
- Carries the aromatics and, with flour, forms the roux that thickens the soup.
- Flour
- Absorbs the butter to form a roux that thickens the soup.
- Lean ham
- Adds savoury, salty depth to the stock base.
- Madeira or sherry
- Adds acidity and aroma that brighten the rich, fatty broth.
- Onions
- Build sweetness and savoury depth as they soften in the base.
The step that matters
Dredge in enough flour to absorb the butter. Flour must be cooked into the melted butter so it forms a smooth roux; adding it raw or in excess leaves lumps or a pasty taste, and too little leaves the soup thin.
Swap the onion
How well each one fits the dish's main ingredients (butter, ham, parsley, lemon, thyme, marjoram, basil):
- Shallotfits better
- Carrotfits better
- Leekfits better
