Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Partridges
Provide the main meat, which becomes tender through braising and simmering in the stock.
Butter
Browns the partridge pieces and adds richness to the braising fat.
Onions
Build the aromatic base and add sweetness as they soften in the soup.
Celery
Adds aromatic flavour to the stock as it simmers.
Stock
Forms the liquid body of the soup and carries the flavour of the meat and vegetables.

The step that matters

Skim the fat and scum. Fat and foam rise to the surface during simmering. Removing them before the final boil keeps the soup clear and prevents a greasy taste.

Swap the onion

How well each one fits the dish's main ingredients (ham, celery, carrot, turnip, sugar, butter, pepper):
