Veal and Ham Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Cut the veal into square pieces and layer them in a pie dish.

  2. Sprinkle with herbs, spices, lemon peel, and sliced egg yolks.

  3. Add a layer of thinly sliced ham on top.

  4. Repeat layering until the dish is full, ensuring ham is on top.

  5. Pour ½ pint of water into the dish.

Top and bake

  1. Cover the edge of the dish with puff pastry.

  2. Seal the crust.

  3. Decorate the crust with leaves.

  4. Brush the crust with egg yolk.

  5. Bake in a preheated oven at 400°F (200°C) for 1 to 1.5 hours.

Finish

  1. After baking, pour ¾ pint of strong gravy through a funnel.

Hard-boiled egg yolks
Add richness and a creamy texture to the filling.
Puff pastry
