Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt pork
Renders fat that browns the pot and flavours the soup base.
Clams
Provide the main seafood flavour and texture of the soup.
Flour
Thickens the milk and broth so the soup turns creamy.
Milk
Adds richness and body, softening the broth into a creamy soup.
Onion
Adds sweetness and savoury depth as it softens in the pork fat.

The step that matters

Adding the flour mixture. Flour mixed with milk must be stirred into the hot soup smoothly. Flour clumps if it is added dry or without first being mixed with liquid, and the soup can thicken unevenly. Milk can also curdle if it is added too aggressively to a very hot liquid.

Swap the onion

How well each one fits the dish's main ingredients (pork, clam, flour, milk, butter, pepper, sauce):

  1. Potatofits better
  2. Capsicumfits better
  3. Shallotfits about as well
  4. Onionthe original

Fit is the average pairing score against pork, clam, flour, milk, butter, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
