Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body of the filling, becoming tender through stewing.
Flour
Thickens the boiling milk into a smooth, body-giving sauce.
Milk
Forms the creamy base of the sauce that binds the oysters.
Oysters
Supply the distinctive briny flavor and texture of the filling.
Butter
Adds richness and fat that carries flavor through the pie.

The step that matters

Thickening the boiling milk with flour. Flour must be stirred in so it disperses evenly while the milk is hot; otherwise it clumps and the sauce stays lumpy. Starch needs heat to swell and thicken the liquid properly.
