Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the cake and sets into a firm, sliceable layer.
Ham
Adds savoury, salty flavour to the layers.
Hard-boiled eggs
Add body and a firm, sliceable texture to the cut cake.
Isinglass
Gelatine-like setting agent that helps the gravy firm up as it cools.
Veal gravy
Adds moisture and meaty flavour that soaks into the layers.

The step that matters

Pour the gravy over the cake while hot. Hot gravy flows into the layers and sets as it cools, so it binds the cake. If it is allowed to cool first, it may not penetrate and set evenly.

Swap the mace

How well each one fits the dish's main ingredients (butter, veal, ham, pepper, parsley, shallot, egg):

  1. Capersfits better
  2. Tarragonfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against butter, veal, ham, pepper, parsley, shallot, egg. Candidates are from the same food group and used in at least 100 recipes.
