Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Codfish
- Provides the main body and flaky texture of the hash.
- Potatoes
- Bind the fish and absorb moisture, giving the hash its soft, starchy body.
- Salt pork
- Renders fat that fries the hash and adds savory flavor.
- Milk
- Adds moisture and softness, helping the mixture hold together while it cooks.
- Butter
- Adds fat and richness, helping the surface brown.
The step that matters
Simmer until a brown crust forms. Cooking over low heat without stirring lets the bottom set and brown gradually. Stirring or turning too early breaks up the crust, and heat that is too high can scorch the pan before the interior is hot through.
