What each ingredient does

Anchovies
Provide the salty, savoury backbone that gives the sauce its character.
Capers
Add sharp, briny acidity that cuts through the richness of the sauce.
Shallots
Contribute a mild, sweet onion flavour that softens as the sauce simmers.
Consomme
Supplies liquid and savoury body, concentrating as it reduces.
Glaze
Adds concentrated meaty flavour and gloss to the finished sauce.

The step that matters

Boil until reduced by half. Reducing concentrates flavour and thickens the liquid. Boiling too briefly leaves the sauce thin and weak, while boiling too hard can scorch the solids and make it taste bitter.

Swap the mace

How well each one fits the dish's main ingredients (capers, shallot, thyme, pepper, mushroom, lemon):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against capers, shallot, thyme, pepper, mushroom, lemon. Candidates are from the same food group and used in at least 100 recipes.
