Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Dressed Fish in General

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Remove the gills from the mackerel and fillet both sides.

  2. Cut each fillet into two pieces and trim the ends.

Cook

  1. Place the fillets side by side in a buttered sauté pan.

  2. Season with salt, pepper, and parsley, then squeeze lemon juice over them.

  3. Pour a little oiled butter on each fillet and cover with buttered paper.

  4. Cook in a 400°F (200°C) oven or on a stove for about 20 minutes.

Serve

  1. Drain the fillets on a napkin and arrange them in a wreath shape on a serving dish.

  2. Serve with Maitre d' Hotel sauce and place parboiled soft roes in the center if using.

What each ingredient does

Mackerel fillets
Forms the main body of the dish and cooks into tender, flaky flesh.
Butter
Adds richness and moisture, carrying heat gently over the fish so it does not dry out.
Lemon juice
Adds acidity that brightens the rich, oily flavour of the mackerel.
Parsley
Adds fresh, green aroma and a light herbal flavour to the fish.

The step that matters

Cook in a 400°F (200°C) oven or on a stove for about 20 minutes. Mackerel is delicate and overcooks quickly, becoming dry and firm. Covering the fish with buttered paper traps moisture and gentle heat so the flesh stays moist and flakes softly.
