What each ingredient does

Lampreys
The main protein, which becomes tender through slow stewing in claret.
Claret
Wine that flavours the stewing liquid, which is then reduced into the sauce.
Brown sauce
Adds body and savoury depth to the sauce as it reduces.
Crayfish butter
Enriches the sauce with fat and a rich shellfish flavour.
Crayfish tails
Add delicate shellfish flavour and texture to the finished sauce.
Button mushrooms
Add earthy flavour and a tender texture to the sauce.

The step that matters

Reducing the cooking liquid into the sauce. Reducing concentrates flavour and thickens the liquid by evaporating water. Reducing too far can make the sauce overly salty or syrupy, while too little leaves it thin and weak in flavour.

Swap the lemon

How well each one fits the dish's main ingredients (sauce, crayfish, butter, nutmeg, mushroom):

  1. Lemonthe original
  2. Coconutfits about as well
  3. Peachfits less well
  4. Limefits less well

Fit is the average pairing score against sauce, crayfish, butter, nutmeg, mushroom. Candidates are from the same food group and used in at least 100 recipes.
