Braized Mutton Cutlets

Ingredients

Directions

Prepare the cutlets

  1. Stud the mutton cutlets with red tongue and black truffles.

  2. Trim the cutlets and coat them with reduced Soubise sauce.

  3. Let the coated cutlets set by cooling.

Bread and chill

  1. Beat the eggs with a little salt.

  2. Dip each cutlet in the egg mixture.

  3. Coat each cutlet with bread crumbs. Flatten the bread crumbs with a knife.

  4. Place the cutlets on a dish in a cool place until ready to fry.

Fry and serve

  1. Heat hog's lard in a deep frying pan until hot.

  2. Fry the cutlets until they are a deep yellow color.

  3. Drain the cutlets on a napkin or paper to absorb excess grease.

  4. Arrange the cutlets in a circle on a vegetable border. Fill the center with a Macedoine of vegetables. Pour half glaze around the base.

  5. Serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the bread crumbs to the cutlets so the coating holds during frying.
Bread crumbs
Form a crisp, golden coating that browns when fried.
Black truffles
Add aroma and earthy flavour to the mutton.
Red tongue
Adds savoury flavour and texture to the cutlets.
Soubise sauce (reduced)
Adds a thick onion-based layer that helps the cutlets set and carry flavour.

The step that matters

Let the coated cutlets set by cooling. Cooling firms the Soubise coating so it stays in place during egg dipping and crumbing. A warm, soft coating can slide off or smear before frying.
