Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

What each ingredient does

Larks
Main protein; the dish is built around the small birds cooked whole on a spit.
Beaten egg yolks
Binds the bread crumbs to the surface so the coating adheres during roasting.
Bread crumbs
Form a crisp, browned coating that protects the meat as it roasts.
Clarified butter
Carries fat and flavor into the coating and promotes even browning.
Fresh butter
Melted for basting, adding moisture and richness to the surface during roasting.

The step that matters

Roast over a brisk fire. A brisk fire browns the crumb coating quickly while the small birds cook through. Too low a heat dries the meat before the coating sets, and basting keeps the surface moist and golden.

Swap the nutmeg

How well each one fits the dish's main ingredients (parsley, pepper, egg, bread, butter):

  1. Thymefits about as well
  2. Nutmegthe original
  3. Marjoramfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against parsley, pepper, egg, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
