Rice Cake, with Almonds

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the rice

  1. Wash the rice and place it in a saucepan with butter, sugar, bitter almonds, sweet almonds, milk, and salt.

  2. Cook gently on a low heat until the rice absorbs the milk, adding more milk if necessary.

Bake and serve

  1. Once the rice is cooked, mix in the egg yolks and whipped egg whites.

  2. Grease a plain mold with butter and sprinkle the shredded almonds inside.

  3. Pour the rice mixture into the mold and bake at 300°F (150°C) for about 1.5 hours.

  4. Once done, turn the cake out onto a dish and pour diluted apricot jam around the base before serving.

What each ingredient does

Rice
Forms the bulk of the cake and sets into a tender, starchy crumb as it absorbs milk.
Egg yolks
Enrich the mixture and help bind it as the cake sets in the oven.
Egg whites
Whipped to trap air, lightening the texture and helping the cake rise.
Sweet almonds
Add nutty flavor and moisture, and their oil contributes richness to the crumb.
Butter
Adds fat for richness and a tender texture, and greases the mold.
Sugar
Sweetens the cake and helps with browning on the outside as it bakes.

The step that matters

Cooking the rice in the milk. Cooking gently over low heat keeps the milk from scorching and lets the rice absorb it evenly, giving a smooth base. Adding egg only after the rice is cooked prevents the eggs from curdling or cooking unevenly.

Swap the apricot

How well each one fits the dish's main ingredients (rice, butter, sugar, almond, milk, egg):

Fit is the average pairing score against rice, butter, sugar, almond, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
