What each ingredient does

Beef suet
Adds fat that keeps the mincemeat moist and rich in texture.
Moist sugar
Sweetens the mixture and helps preserve it along with the spirits.
Brandy
Acts as a preservative and adds aroma to the mixture.
Currants
Provide sweetness and chewy fruit texture throughout the mixture.

The step that matters

Covering the pan to exclude air. Sealing the pan keeps air out, which limits spoilage by mold and oxidation during the two-week storage, so the lid and cloth should fit tightly.
