Fillets of Beef a LA Comtesse De Pomar

Ingredients

Directions

  1. Cut the beef into slices ¼ inch thick and then into rounds the size of a coin, aiming for two rounds per person.

  2. Season the rounds with pepper and salt.

  3. Place a slice of beef marrow and a slice of truffle between two fillet rounds, filling the space with beef farce.

  4. Press the fillets together and wrap them in cleansed caul.

  5. Dip the wrapped fillets in beaten egg white and brush with salad oil or clarified butter.

  6. Grill or broil for about 5 minutes, using oiled straws to prevent sticking.

  7. Brush the fillets with egg white again, sprinkle with chopped truffle, and grill for another 8 minutes under a buttered paper.

  8. Serve hot on a bed of cooked beef farce, with Pomar sauce around them.
