What each ingredient does

Calf's head
Forms the main body of the dish, providing the meat that is cooked two different ways.
Egg yolk
Brushed over the surface, it helps the crumb coating brown and adds richness.
Grated bread
Forms the crumb coating that absorbs the seasoning and crisps during baking.
Butter
Dotted over the seasoned half, it adds fat that enriches the surface and aids browning.
Lemon peel
Adds aromatic oils that brighten the rich meat.

The step that matters

Boil the other half in a cloth until white. Boiling gently in a cloth keeps the meat moist and gives it a pale, even colour. Over-boiling toughens the proteins and makes the meat dry and stringy.

Swap the nutmeg
