Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the outer leaves that wrap and hold the filling together.
Hard-boiled eggs
Add body and richness to the filling as they bind with the fish.
Butter
Adds richness and moisture to the filling and the sauce.
Bread crumbs
Absorb moisture and help the filling hold its shape.
Flounder or plaice fillets
Provide the mild fish base of the stuffing.
Truffles
Contribute a concentrated earthy aroma to the sauce.

The step that matters

Simmer for 1 hour. A gentle simmer lets the cabbage become tender and the sauce flavours blend without the fish filling breaking apart. Boiling hard can toughen the fish and split the parcels.

Swap the cabbage
