A Goose Marinaded
Ingredients
Directions
Bone the goose and stuff it with a mixture of sage, onions, apples, bread crumb, beef marrow, red wine, nutmeg, pepper, salt, lemon peel, and egg yolks. Sew it up.
Fry the stuffed goose until light brown.
Place the goose in a deep stew pan with the gravy. Cover and stew for 2 hours.
Remove the goose, keep it warm, and skim the fat from the gravy.
Add lemon pickle, browning, red wine, anchovy, mace, pepper, and salt to the gravy. Thicken with flour and butter.
Strain the gravy over the goose and serve.
