Why it works: Cabbage and cauliflower match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 305 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Scalloped Vegetables

Ingredients

Directions

  1. Cut potatoes into cubes and quarter or tear apart onions. Separate the flowerets of cauliflower and pull apart cabbage leaves if not separated before cooking.

  2. Season the vegetables with 2 teaspoons of salt for every quart of water used to boil them.

  3. Place the seasoned vegetables into a baking dish.

  4. Pour thin White Sauce over the vegetables.

  5. Bake until heated through and the top is golden brown.
