Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oxtail
Provides meat and gelatin-rich connective tissue that enriches the broth as it simmers.
Madeira wine
Adds aromatic depth and a subtle sweetness to the finished soup.
Lemon juice
Adds acidity that brightens the rich, savory broth.
Brown stock
Forms the liquid base that carries the flavor of the whole soup.

The step that matters

Browning the oxtail. Dredging in flour and frying in butter until nicely browned creates Maillard reaction flavors that deepen the broth. Pale meat will give a flatter, less savory soup.

Swap the lemon

How well each one fits the dish's main ingredients (carrot, celery, onion, turnip, pepper, madeira wine, sauce):

  1. Limefits about as well
  2. Lemonthe original
  3. Cherryfits less well
