Cream Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Boil the chicken until cooked, then let it cool and cut it into pieces as for a salad.

Make the sauce

  1. In a saucepan, combine the cream and milk and bring to a boil.

  2. In another pan, melt the butter, then add the flour and stir until combined.

  3. Pour the boiling milk and cream mixture over the butter and flour, then add the grated onion and a little grated nutmeg.

  4. Season the mixture generously with black and red pepper.

Assemble and bake

  1. Mix the chicken pieces and mushrooms with the sauce, then transfer to a baking dish.

  2. Cover the mixture with grated breadcrumbs and small pieces of butter.

  3. Bake in a preheated oven at 400°F (200°C) for about 20 minutes or until golden brown.

What each ingredient does

Chicken
Provides the main protein and bulk of the dish once cooked and cut into pieces.
Cream
Adds richness and a smooth, silky texture to the sauce.
Milk
Thins the cream base into a pourable sauce with moisture.
All-purpose flour
Thickens the butter and milk mixture into a smooth sauce that holds the filling together.
Butter
Enriches the sauce with fat and flavor and helps the flour cook into a roux.
Breadcrumbs
Form a crisp, golden browned topping during baking.

The step that matters

Pour the boiling milk and cream mixture over the butter and flour. Adding the hot liquid to the roux while stirring prevents lumps; the flour starch must be whisked in smoothly to thicken evenly as it heats.

Swap the nutmeg

How well each one fits the dish's main ingredients (chicken, mushroom, cream, milk, flour, butter, onion):

  1. Garlicfits better
  2. Thymefits about as well
