Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Scrub the goose with hot soapy water.

  2. Draw the goose.

  3. Wash the goose thoroughly in cold water.

  4. Wipe the goose dry.

  5. Stuff the goose.

  6. Truss the goose.

  7. Sprinkle the goose with salt and pepper.

  8. Cover the entire breast with the strips of salt pork.

Roast

  1. Place the goose on a rack in a dripping pan.

  2. Pour the water into the pan underneath.

  3. Bake the goose at 400°F (200°C) for 2.5 hours.

  4. Baste the goose every 10 minutes.

  5. Remove the pork during the last 30 minutes of baking.

Serve

  1. Garnish the dish with watercress.

  2. Serve the goose with apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Provides the main meat, whose fat renders during roasting to keep it moist and browned.
Salt pork
Its fat bastes the breast as it melts, adding moisture and savory flavor.
Apple sauce
Its acidity and sweetness cut through the rich, fatty goose meat.

The step that matters

Remove the pork during the last 30 minutes of baking.. Leaving the salt pork on too long can make the breast greasy and salty, and it stops the skin from crisping. Timing the removal lets the skin brown.

Swap the apple

How well each one fits the dish's main ingredients (pork, pepper, sauce, watercress):

  1. Avocadofits better
  2. Limefits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against pork, pepper, sauce, watercress. Candidates are from the same food group and used in at least 100 recipes.
