What each ingredient does

Beets
Form the main body of the salad and hold the filling.
Vinegar
Adds sharp acidity that sharpens the sweet, earthy flavour of the beets.
Cucumbers
Add cool moisture and a crisp texture to the filling.
Celery
Adds crunch and a fresh, slightly bitter note to the filling.

The step that matters

Let the beets stand overnight in vinegar. The vinegar's acid penetrates the beet flesh, seasoning it evenly and tempering its sweetness. A shorter soak leaves the flavour sharp only at the surface and the beets less evenly flavoured.

Swap the celery

How well each one fits the dish's main ingredients (vinegar, cucumber, lettuce, parsley):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits better
  4. Celerythe original

Fit is the average pairing score against vinegar, cucumber, lettuce, parsley. Candidates are from the same food group and used in at least 100 recipes.
