What each ingredient does

Green tomatoes
Provide tart, firm bulk that holds its shape during long simmering.
Ripe tomatoes
Add juice and body that help form the relish's moist, saucy base.
Cabbage
Adds crunchy texture and bulk that softens gradually as it cooks.
Coarse sea salt
Draws water out of the vegetables, firming them and concentrating flavour before cooking.
Brown sugar
Adds sweetness and helps balance the sharpness of the vinegar.
Vinegar
Provides acidity that preserves the relish and gives it its tangy flavour.

The step that matters

Draining after salting. The salted vegetables release a lot of liquid over 24 hours. Draining them well keeps the final mixture from being watery and lets the vinegar and sugar season it properly.

Swap the tomato

How well each one fits the dish's main ingredients (onion, cabbage, horseradish, sugar, pepper, mustard, celery):

  1. Turnipfits better
  2. Broccolifits better
  3. Lettucefits better
  4. Tomatothe original

Fit is the average pairing score against onion, cabbage, horseradish, sugar, pepper, mustard, celery. Candidates are from the same food group and used in at least 100 recipes.
