Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the punch a light, airy texture.
Sugar
Boiled into a syrup that sweetens the punch and stabilises the whipped whites.
Pineapple ice
Forms the frozen base that chills and dilutes the punch as it melts.
Jamaica rum
Adds alcohol and rich flavour that carries the punch's aroma.
Champagne
Adds bubbles and acidity, lightening the texture when gently whipped in.

The step that matters

Gradually add the hot syrup while stirring until cold. Pouring hot syrup too fast into whipped egg whites can deflate the foam and cause the meringue to weep. Adding it slowly while beating lets the whites cool and stay stable.

Swap the vanilla

How well each one fits the dish's main ingredients (pineapple, egg, rum, sugar, champagne):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Bananafits less well
  4. Mangofits less well

Fit is the average pairing score against pineapple, egg, rum, sugar, champagne. Candidates are from the same food group and used in at least 100 recipes.
