Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Line a pudding dish with rich pastry.

  2. Arrange sliced ham in the dish.

  3. Add minced sweet herbs, season with pepper, cinnamon, nutmeg, and add fresh butter and a bay leaf.

  4. Cover with a top crust of the same pastry.

  5. Glaze the top with beaten egg yolk.

  6. Bake at 400°F (200°C) for 30 minutes.

  7. After baking, insert a funnel and pour in mutton juice and lemon juice.

  8. Serve with a little minced shallot.
