Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the bread into large rounds and toast them.

  2. Beat the egg whites until stiff, ideally one at a time to keep the yolks intact.

Assemble and bake

  1. Heap the beaten egg whites symmetrically on each slice of toast, creating a slight depression in the center.

  2. Carefully drop an egg yolk into the depression on each toast.

  3. Place the toasts in a hot oven at 400°F (200°C) for 2-3 minutes until the yolks are cooked.

Serve

  1. Serve with a small piece of butter on top and season with salt and pepper.

What each ingredient does

Egg whites
Whip into a stiff foam that holds its shape and sets into a light, airy nest in the oven.
Egg yolks
Sit in the center of the nest and set when heated, giving a soft, rich centre.
Slices of bread
Act as a crisp base that supports the egg whites and stays sturdy under the moist topping.
Butter
Adds richness and flavour to the toast and melting yolk when served.

The step that matters

Beating the egg whites. Any trace of yolk or fat in the whites prevents them from whipping to full stiffness, so the nests collapse. Separating one egg at a time keeps each white clean and lets you stop if a yolk breaks.
