Directions

Extract the juice

  1. Wash the crab apples and cut off any black specks.

  2. Place the apples in a skillet.

  3. Add enough water to cover them.

  4. Simmer until tender.

  5. Turn the mixture into jelly bags.

  6. Let it drip to collect the juice.

  7. Set aside the first juice for No. 1 jelly.

  8. Squeeze out the remaining juice for No. 2 jelly.

Make the jelly

  1. Weigh the juice.

  2. Add 1 pound of white sugar for each pint.

  3. Boil the mixture.

  4. Skim carefully for about ten minutes.

  5. Test the jelly by pouring a little into a saucer.

  6. If it jellies when cold, it is done.

  7. Strain into jelly glasses.

  8. Let cool before sealing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the fruit, natural pectin and acidity that let the juice set into jelly.
White sugar
Sweetens the jelly and helps it set firm and hold its shape when cooled.

The step that matters

Test the jelly by pouring a little into a saucer. Jelly sets only when enough pectin, acid and sugar are concentrated by boiling. Cold-testing a small sample shows whether it will gel before the batch is overcooked or left too thin.

Swap the apple

How well each one fits the dish's main ingredients (crab, sugar):

  1. Raisinfits better
  2. Lemonfits better
  3. Vanillafits better
  4. Applethe original

Fit is the average pairing score against crab, sugar. Candidates are from the same food group and used in at least 100 recipes.
