What each ingredient does

Haddock
Forms the main flaky, tender body of the chowder as it cooks.
Salt pork
Adds savory fat and browned flavor to the pot.
Potatoes
Add starch that thickens the broth and gives body to the chowder.
Milk
Adds creaminess and richness to the broth once it is scalded.
Bread crumbs
Help thicken the broth and soften into the chowder.
Tomato ketchup
Adds sweetness, acidity and a tangy reddish tint to the finished chowder.

The step that matters

Let the milk scald without boiling. Milk can curdle or separate when it boils hard, especially in an acidic or salty broth. Adding it near the end and heating it gently keeps the chowder smooth and creamy.
